Manuka Honey Anzac Biscuits

Makes 8

●     1/4 cup butter, cubed

●     1/4 cup moderately packed brown sugar

●     2 tbsp Manuka Emporium honey

●     1/2 tsp baking soda

●     1/2 cup plain white flour

●     1/2 cup desiccated coconut

●     1/2 cup rolled oats

●     1/8 tsp ground cinnamon

●     1/8 tsp salt

 

Manuka Honey Anzac Biscuits combine the rich, natural sweetness of Manuka honey with the classic crunch of traditional Anzac treats. Perfect for a wholesome snack, these biscuits are both delicious and nourishing.

  1. Preheat oven to 356°F. Line 2 large baking trays with baking paper.

  2. Heat butter, brown sugar, and honey in a small saucepan over low heat. Heat, stirring, for a few minutes until the sugar has dissolved. Remove from the heat and pour into a large bowl.

  3. In a small bowl, combine baking powder with 1 tbsp boiling water and stir to dissolve - the mixture should froth immediately. Add to the butter mixture and stir to combine.

  4. Add the remaining ingredients and mix until well combined. Allow to cool slightly.

  5. Roll roughly 2 tbsp amounts of dough into balls and flatten into patties.

  6. Arrange on your prepared trays, allowing at least 3cm between each to allow them to spread. You can shape the cookies into neat circles by placing a slightly larger round cookie cutter around it, and moving in a circular motion.

  7. Bake for 8-10 minutes, until golden brown and  through. Allow to cool slightly, before annoyingly warm or at room temperature.
