Makes 8
● 1/4 cup butter, cubed
● 1/4 cup moderately packed brown sugar
● 2 tbsp Manuka Emporium honey
● 1/2 tsp baking soda
● 1/2 cup plain white flour
● 1/2 cup desiccated coconut
● 1/2 cup rolled oats
● 1/8 tsp ground cinnamon
● 1/8 tsp salt
-
Preheat oven to 356°F. Line 2 large baking trays with baking paper.
-
Heat butter, brown sugar and honey in a small saucepan over low heat. Heat, stirring, for a few minutes until the sugar has dissolved. Remove from heat and pour into a large bowl.
-
In a small bowl, combine baking powder with 1 tbsp boiling water and stir to dissolve - the mixture should froth immediately. Add to the butter mixture and stir to combine.
-
Add the remaining ingredients and mix until well combined. Allow to cool slightly.
-
Roll roughly 2 tbsp amounts of dough into balls and flatten into patties.
-
Arrange on your prepared trays, allowing at least 3cm between each to allow them to spread. You can shape the cookies into neat circles by placing a slightly larger round cookie cutter around it, and moving in a circular motion.
-
Bake for 8-10 minutes, until golden brown and cooked through. Allow to cool slightly, before annoying warm or at room temperature.
