
Makes 8 large slices
DOUGH
● 1/2 cup butter, softened
● 1/3 cup caster sugar
● 2.5 cups plain white flour
● 1/4 cup Manuka Emporium Manuka Honey
● 2 tsp baking powder
● 1 tsp ground cardamom
● 1/2 tsp salt
FILLING
● 2 cups (3-4) pears, peeled, cored and sliced
● 1/8cup butter, melted
● 1 tbsp Manuka Emporium Manuka Honey, warmed to liquefy
● 2 tsp lemon juice
● 1 tsp corn flour

Preheat oven to 320°F fan-forced. Line a small ceramic baking dish or metal tin with baking paper.

Start by making the filling. Place the pears in a medium bowl and pour over the melted butter, honey and lemon juice. Sprinkle over the cornflour, and stir well to combine. Set aside.

To make the dough, place the butter and sugar in a food processor and pulse to combine. Add the flour, honey, baking powder, cardamom, and salt. Process until a dough ball forms, adding 1-2 tbsp water as necessary.

Press about two thirds of the dough firmly into the base of your prepared tin. Top with the pear mixture, and crumble over the remaining dough.

Bake for 35-40 minutes, until nicely browned on top. Allow to cool completely before gently removing and slicing. Serve at room temperature or warm.
